Special Report: 2009 in review
The foodservice industry spent 2009 slogging through the worst economy in living memory, facing customers whose most frugal moods in previous years seemed downright extravagant compared with their attitude over the past 12 months. Consequently, the year found several chains filing for bankruptcy and independent landmarks closing their doors for good. But it wasn’t all bad news. Restaurants trimmed down, renegotiated leases, took advantage of lower food costs, and tried new strategies to cut costs and attract customers — and sometimes it worked.

After the fall
Last month the Federal Reserve chairman Ben Bernanke declared that the recession the country had slipped into almost two years ago was “very likely over.” And while that may well be true, it’s not how most people are feeling — yet. While the recession technically could be past — in other words, the country has posted growth once again in its gross domestic product — that good news has yet to manifest itself in such tangible ways for restaurant operators as increased consumer traffic or upward-bound top lines. For the foodservice industry, the Champagne is still on ice.

Although commodity prices are widely expected to ease this year, restaurateurs say the bottom-line benefits already are being offset by a more vexing cost concern. Consumer Trends: What Do They Want (And Why)?
Restaurants can flourish or flounder depending on how deftly they embrace important consumer trends and how judiciously they shun false or misleading indicators of customer preferences. Those fact of business life — knowing how to read the tea leaves of shifting demographics and react to the signposts of evolving demand — sometimes are matters of good instincts and dumb luck. More often, however, careful and calculated research into consumers' tendencies and desires is what can make or break a restaurant operator's adaptation to lucrative trends. And averting business disaster often means avoiding investments in presumed trends that really are just flashes in the pan. In this issue's wide-ranging report NRN reporters take in-depth looks at such crucial matters as the delicate balancing act restaurants must perform in catering to diners' alternating inclinations toward good-for-me responsibility and dietary self-indulgence.

Catering boom outstrips sales growth rate for industry

Catering is one of the fastest-growing segments of the foodservice industry, expected to top $14 billion in sales in 2005, with off-premises caterers, banquet halls and hotels commanding the majority of the special-event market — but not monopolizing it. Indeed, restaurateurs increasingly are getting into the game, expanding their catering and private-dining services as a way to garner incremental sales and optimize overhead in the face of escalating operational costs and slimmer profit margins.

THE ASIAN FACTOR: Coming to America
As multinational foodservice companies like McDonald’s Corp. and Yum! Brands Inc. increasingly focus on growth in Asia, Asia-based restaurant companies similarly are looking to the United States in search of unit expansion and revenue growth. The huge U.S. population, its growing interest in Asian cuisines and concepts — and the relative infancy of the Asian-chain segment — make the United States a perfect market for overseas penetration, according to executives at restaurant companies based in Asia. The U.S. restaurant environment is hardly the mature market that veteran restaurant operators would have people believe, they say.

Even though the new year just began, restaurant employers who expect to need temporary labor from abroad already have lost the race with other industries that have monopolized the nation’s annual quota of visas for foreign-born workers. Foodservice operators who depend on temporary staffers for their restaurants, resorts and other vacation area businesses will, for a second year in a row, face the grim possibility of not being able to hire seasonal workers from overseas or being fully staffed during their busiest seasons in 2005.

2005 FORECAST & TRENDS
Positive sales, growth trends to continue, analysts say Restaurants should see improvements in their top-line performance in 2005, spurred by increasing consumer demand for their products, and operating margins also may rise despite bottom-line challenges posed by rising costs, industry analysts say. The National Restaurant Association predicts that industry sales will jump 4.9 percent to $475.8 billion in 2005 at a record 900,000 locations. That strong showing is predicted to be widespread - across all geographic regions and industry segments - even after adjusting for the impact of menu price inflation, which the NRA is forecasting will be 2.7 percent for the year.

2004 the Year in Review
Since biblical times years often have been labeled either as those of feasts or those of famine. As far as news was concerned, 2004 had some of both, with a whole lot of diet and nutrition thrown in. The year had heft and girth and gravitas, but mostly it was focused on obesity and the growing size of the American consumer. Diets - from Atkins to South Beach to low-carb to no-carb - were on the tips of people's tongues as foodservice providers attempted to appeal to many concerns. The industry celebrated victories and mourned losses. There were closings of old concepts and openings of new, inventive ones. The cycle of life continued. Nation's Restaurant News' Year in Review for 2004 covers the high points, the low points and all the morsels of news in between.

The Alcohol Debate
Operators find their cups runneth over as a global wine surplus, an increasingly educated public and a by-the-glass boom boost sales and create a call for varied vintages from around the world. Drops to gallons once might have been an apt ratio to describe the huge difference in the wine consumption habits of Americans and Europeans. But for a host of reasons, the American and French per-capita numbers hide a history-making development: American consumption is rising and was up a record 5.2 percent last year, while French consumption was down nearly 6 percent.

Minding your business - Psychology to boost the bottom line
The editors of Nation's Restaurant News spent weeks delving into the underlying psychology of away-from-home dining decisions and consumer satisfaction. We also probed the psychological underpinnings of employee motivation and job gratification. In talking with psych-savvy restaurateurs, academicians, marketing consultants and industrial psychologists, we were reminded about just how sophisticated foodservice organizations have become in reading and feeding consumers' mealtime mentalities. In their effort to put the foodservice industry "on the couch," these stories seek to shed light on that inner realm of inclinations and motivations. However, they also keep in mind that a clinical look at the nerves and synapses firing the mind's imagination are tied inextricably to our instinctual heartstrings.
